Winemaking:
The maceration is carried out without stems at controlled temperature (28 ° C) for a period of 10-12 days. The malolactic fermentation in steel tanks, and is followed by a maturation that is managed partly in small oak barrels capacity, and partly in barrels for a minimum period of 15 months. Assembling the wine takes place in stainless steel tanks. When necessary, clarification is made with egg white. A very large filtering is applied at bottling followed in bottle for at least 6 months.

Characteristics:
Rocca di Castagnoli Chianti Classico is a wine of excellent structure and complexity of taste, is ruby red with violet hues. The aroma is intense and full of fruity and vinous, accompanied by a pleasant balsamic component, the woody note is particularly commendable and balanced. The palate shows soft and pleasant, with hints of tannins still vibrant, but perfectly integrated with the extractive components of wine. Our wine undergoes a light filtration and this may involve a small sediment on the bottom of the bottles.

White meat processed red meats, mature cheeses.
Serving temperature:
18 ° C (we recommend "scaraffatura" before serving)
Resistance to aging:
Expresses its best from 3 to 4 years after harvest.
